Summer Foods

      Summer still prevails this month of May. Colorful summer flowers are still brilliant in their full bloom and most fruits are in abundance. So much for that if you would have to stand the long summer heat. I had to change the menu served on the table. The usual food no longer appeals to the hot summer days ahead. Soup dishes are definitely a no go. I find simple foods more delectable to the palate. 'Cooling,' 'Refreshing,' Relaxing,' 'Revitalizing,' are the words that rule for now. So I scoured the internet for sumptuous summer dishes yet, very easy to prepare and healthy too. Lots of fruits, salads, salsa, and a wide variety of cool fruit concoctions to indulge on.




Green salads are my favorite and this is just one of them - Lettuce, tomatoes, cucumbers and oranges salad drizzled with a mixture of honey and vinegar








Daing, A timeless favorite among
Filipinos. Eggs cooked sunny-side up and sliced tomatoes can be served on the side. Sliced green mangoes, grilled brinjals and sliced tomatoes with bagoong are preferred side items to this main dish.


Blanched Kangkong topped with a mixture of fried shrimps, chopped red onions, tomatoes and bagoong (shrimp paste).

Another one of those Filipino delicacies, Seaweeds salad. I just love this salad. However, not everyone likes to eat it. But you may change your mind once you learn of its healthy benefits. Apart from eating it solo, this is usually served tossed with diced tomatoes and onions, sliced green mangoes, vinegar and calamansi juice.


Tapa Vegetable rolls. I got this recipe from Good Housekeeping. The vegetables may vary. But this one has shredded carrots, turnips and lettuce. 







      Other foods that can be delightful this summer are tapsilog, longsilog, hotsilog, all the best food combinations. You name it. Summer is a time for cooking easy - fried, grilled, baked. There are lots of vegetables and fruits in season which means more choices of healthier foods to eat.
